2021 Domaine Florence Cholet Saint Romain ‘Sous La Velle’ (Pinot Noir), Burgundy France

Saint Romain is a tiny place. Vineyards make up only 7% of the appellation area and there are no Grand or 1er Crus. This is, emphatically, not a bad thing. What you get here is a more humble interpretation of Burgundy. These are wines which, while undoubtedly dignified, are approachable in their youth and full of flavour.

Florence Cholet has taken full advantage of this. Unlike many Burgundies, there is a focus on energy here. The wine carries its array of dark berries on a tightrope of acid, with finely woven tannins giving support to savoury spices and dried herbs. It's absolutely stunning to drink now, but the best will come in another ten years.
